Looking for a vibrant, healthy, and fun way to eat fish? Try these easy-peasy lettuce wraps!

I went with a simple Cajun profile by tossing the fish in Cajun spice and saucing the wraps with a Louisiana-style rouille sauce. To save time and effort, I simplified the sauce to work with pantry ingredients and no fuss.

These wraps will be a hit, whether you enjoy them for an easy weeknight dinner, or as an outdoor shore lunch!

Ingredients

  • For the Fish Tacos
  • 4 small or 2 medium-large skinless fillets of rockfish

  • +/- 2 tsp Cajun seasoning (depending on your spice tolerance)

  • 2 tsp Olive oil

  • Salt (***only if there is none in the seasoning)
  • 1 head green or bib lettuce

  • 1 carrot, peeled and cut into thin matchsticks

  • 1 red bell pepper, cut into thin matchsticks

  • 1 cucumber, cut into thin matchsticks

  • For the Cheater Rouille Sauce
  • 1/2 cup mayonnaise

  • 1 loose cup fresh basil leaves, minced

  • 1 -2 cloves garlic, smashed and minced finely

  • 4 strips jarred roasted red pepper, finely minced

  • 1 tbsp milk or cream

  • Louisiana-style hot sauce to taste (I used about 2 tsp)

  • Salt and pepper to taste

Preparation

  • For the Fish
  • Cut the fish into large-ish bite-sized chunks.
  • Add oil, Cajun spice, salt (if using) and fish to a bowl and toss well.
  • Add the fish to a skillet over medium-high heat and cook for 3-5 minutes, or until a fork easily flakes a chunk of the fish. Remove from heat.
  • For the Sauce
  • Mix ingredients together for a slightly chunky sauce, blend on high for a smooth sauce.
  • For the Wraps
  • Peel off large leaves of lettuce and fill them with the veggies, fish, and a generous amount of sauce. Enjoy!
