I recently took a trip to Costa Rica. The biodiversity within the country is spectacular. Whether it be on land or in the sea, you will find yourself viewing a huge diversity of colorful and exotic organisms.

As an avid angler, my trip was a total dream. My friends and I pulled bonita, jacks, blue runner, and even a sailfish. However, it was the bonita that ultimately made it onto our dinner plates.

I love sushi and sashimi, but I have very little experience with ceviche. This trip offered the perfect time to throw together a ceviche recipe on the fly. I used a couple of recipes as inspiration, but I put my own riff on it. Boy, did it turn out great. If you ever find yourself with high-quality, fresh tuna, you have to try this recipe!

How to Make Bonita Ceviche

Ingredients

  • 2 medium -sized tuna filets

  • Lemon or lime juice

  • 1 cup spicy peppers (whatever you prefer), minced or sliced

  • 1 large tomato, diced

  • 1 red onion, diced

  • 1.5 cup mango, peeled and diced

  • Salt

  • Pepper

  • 1 tbsp Garlic Powder

  • 1/4 cup Chopped Cilantro

  • Sugar

Preparation

  • Dice your tuna and add approximately one-half cup of lemon or lime juice. Set the fish aside in the fridge for 10 minutes. While the fish is set aside, dice your peppers, tomato, onion, and mango, and place them in a large bowl.
  • Depending on the size of your filets, you may have to add or subtract some of the produce to achieve balance in the dish. You do not want to have too much fish, and you do not want to have too much produce.
  • Add the fish to the diced produce. Add salt to taste, a liberal seasoning of pepper, and approximately 1 tablespoon of garlic powder. Using a spoon, fold the entire mixture together until it is homogeneous.
  • Taste your mixture for acidity. If it is too acidic for your taste, add granulated sugar until you have achieved the desired taste.
  • Once your ceviche satisfies your taste buds, add approximately ¼ cup of cilantro. Mix one more time and serve with your favorite tortilla chips, potato chips, or bread
