2024 – Wild boar carnitas made in an Instant Pot are tender, juicy, and have crispy edges loaded with flavor. This easy recipe turns wild boar meat, such as a butt or a shoulder into seasoned, shredded meat that can be used for tacos, bowls, or even nachos.

The boar is seasoned with citrus juices, along with fresh roasted green chili, to give it a Southwest kick. The combination of orange and lime juice brings a bright balance, making the crispy bits even better!

Once the boar has cooked in the Instant Pot, it will be so tender that it falls right apart, perfect for shredding. Give it a quick broil; the carnitas will have delicious crisp edges. Now is the perfect time for the chef to sneak a piece.

I find these carnitas best served in warm tortillas crisped on the Blackstone grill or in a cast iron skillet, then garnished with fresh cilantro, chopped onion, avocado, and roasted green chili. Wild boar carnitas are always a hit in our house; going back for seconds is standard practice.

The Instant Pot makes this process quick and easy, delivering tender, flavorful carnitas without sacrificing any of the rich, savory taste.

Ingredients

  • 1 tablespoon dried oregano

  • 1 tablespoon cumin

  • 1 teaspoon chili powder

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • ¾ cup orange juice (or the juice of 2 oranges)

  • ¼ cup lime juice (or the juice of 2 limes)

  • 1 yellow onion, chopped

  • 5 garlic cloves, minced

  • 4 pounds wild boar shoulder

  • 3 fresh green chilies, roasted, peeled, and chopped

Preparation

  • Cut the boar meat into 2-3 inch chunks and place into the Instant Pot.
  • Mix the dried oregano, cumin, chili powder, salt, and black pepper in a bowl and rub the mixture all over the chunks, coating them thoroughly.
  • Pour in the orange and lime juices, then add the chopped yellow onion, minced garlic, and freshly roasted green chili to the Instant Pot.
  • Set the Instant Pot to high pressure and cook for 1 hour. (It will take about 15 minutes to reach pressure before cook time can start.)
  • Once the cooking time is finished, allow the pressure to release naturally for 15 minutes. Then, manually release the remaining pressure and open the lid.
  • Shred the boar, discarding any excess fat. The meat should be tender and flavorful.
  • To crisp the edges, spread the boar evenly on a baking sheet lined with aluminum foil, then drizzle a bit of the liquids from the Instant Pot over the meat and broil it in the oven for 5-10 minutes until the edges are crisp and golden.
  • Serve the carnitas in tortillas, burrito bowls, or as desired. Garnish with fresh cilantro, onion, avocado, and additional roasted green chilies for extra flavor and heat.
