This is your favorite fast food fish sandwich, but with wild-caught pink-fleshed rainbow trout instead of chipped random bottom-trawled white fish. Trust us, it will make your tummy happy!

Ingredients

  • 4 rainbow trout filets finely chopped with a knife or food processor

  • ¼ c all purpose flour

  • 1 c plain panko bread crumbs

  • 1/2 tsp salt

  • ½ tsp ground black pepper

  • ½ tsp paprika

  • ½ tsp turmeric

  • ½ c mayonnaise

  • 4 gherkin pickles minced

  • ½ tsp spicy ground mustard

  • 1 tsp lemon juice

  • 1 tsp pickle juice

  • ½ tsp dried dill

  • 1 slice yellow American cheese, cut in half lengthwise

  • Avocado oil for frying

  • Hamburger buns

Preparation

  • In a medium sized bowl, mix flour with ¼ tsp salt and ¼ tsp pepper, then incorporate the chopped/ground trout filet into it until mixture is able to be formed into square patties. Set aside.
  • Heat a thin layer of avocado oil in a cast iron pan on medium to high heat.
  • While the oil heats up, mix panko, paprika, turmeric, and remaining salt and pepper. Spread out onto a shallow plate for dredging. Set aside.
  • Place both patties in the oil, fry for 2 minutes on each side
  • While the fish is frying, in a small bowl mix minced gherkins with mayo, mustard, lemon juice, pickle juice, dill, and a pinch of salt and pepper to taste.
  • Take fish patties out of the oil and set on a grate to allow oil to drip off
  • To assemble, layer patty and cheese first to the bottom of the burger bun, spread generous amount of tartar sauce on the inside of the top of the bun and place on top of the sandwich. Enjoy right away.
  • For a more authentic Filet-O-Fish sandwich, be sure to steam the bun in a pan, on top of a mason jar lid with a thin layer or water, or in the microwave with a damp paper towel on top of the bun, for 15 seconds.
