As the sun warms the Florida Keys, I find myself longing for dishes that feel like a vacation on a plate, and this Spiny Lobster Curry hits that mark perfectly. It’s a celebration of bold, tropical flavors—creamy coconut, fragrant curry leaves, and a hint of heat from green chilies—coating sweet, tender lobster meat. Each bite carries the essence of the islands, rich and aromatic, yet brightened with a squeeze of lime. This isn’t just a meal; it’s an experience that transports you straight to a breezy seaside terrace.

For the best results, use fresh spiny lobster if you can get it—the meat’s natural sweetness makes the curry unforgettable. Don’t skimp on the aromatics: mustard seeds, curry leaves, ginger, and garlic form a fragrant foundation that elevates every element of the dish. Serve it with fluffy basmati rice or warm roti to soak up the luscious, coconut-spiked sauce, and don’t forget the lime wedges—they add the perfect tangy counterpoint to the richness of the curry.
