Recipe Notes

This goose breast pastrami is very delicious on its own and lasts for quite a while in the refrigerator. I made the pastrami, but didn’t end up making the pizza until a few weeks later. I bought frozen pizza dough from a local bakery, and because tomatoes were not quite in season yet, I used jarred Rao’s pizza sauce, which has a great fresh flavor. I have an Ooni pizza oven at home, which does a fantastic job of cooking pizzas, but because we have a wood-fire pizza oven here at the winery, I opted to cook the pizza that way instead.

Pairing Notes
I typically love our Zinfandels with red sauce pizza. I tasted through our lineup of Zins, thinking I would find the perfect pairing, but was surprised to discover my favorite wine with this pizza was with our 2022 TR Passalacqua Cabernet Sauvignon. The Cabernet balanced out the saltiness of the pastrami and blended seamlessly with the garlic while boosting the tomato flavor. The pizza softened the wine and pushed the fruit to the forefront, adding lushness to the palate. I always love a surprise combo, and this one was truly spectacular!
