Ingredients

  • 1 turkey breast

  • ½ cup flour

  • 1 tbsp garlic powder

  • ½ tbsp smoked paprika

  • 4 tbsps fish sauce

  • ½ tbsp black pepper

  • ½ tsp white pepper

  • For the Sauce
  • 1 ½ tbsps. Brown sugar

  • ½ tbsp fish sauce

  • 2 tbsps soy sauce

  • 2 tbsps fresh diced garlic

  • 4 tbsps fresh coriander

  • 2 tbsps finely diced shallots

  • 2 tbsps fresh green onion

  • 1 sliced Thai chili for heat

  • 1 tbsps oil

  • ½ tbsp sesame oil

  • 1 tsp Thai basil

  • 3 tbsps sriracha

  • ¼ cup turkey bone broth

Preparation

  • FOR THE TURKEY
  • Dice the turkey breast into bite size pieces and marinate for at least 15 min in fish sauce and white pepper.
  • Mix the flour with garlic powder, smoked paprika, and black pepper. Add into a big ziplock bag or container that you can shake in!
  • Take the meat out of the marinade and add to the flour mixture and shake up until well coated.
  • Deep fry in medium hot oil until golden…about 5-6 minutes.
  • Remove from oil and set aside on paper towel to soak up excess oil.
  • FOR THE SAUCE
  • Heat up a pan on medium heat and add oil. Add chopped garlic – let it brown but not burn, it happens fast, so keep sauteeing.
  • Crank the heat to medium heat and add the soy sauce, brown sugar, sriracha and mix all together.
  • Add the turkey into the sauce and coat in sauce. Turn off the heat.
  • Add the fresh herbs, green onion, and shallots last.
  • Serve immediately while it’s still crunchy (it’s great over rice). Enjoy!
