Air Fryer Venison Kofta Platter

5.0 from 1 vote

Winter is the season for holiday parties and gatherings with friends and family. A lot of people put out different spreads or charcuterie boards, but here is a different idea for others to graze…a kofta platter! You can use any ground meat, or even a combination, but I used ground venison.

I prepared this for a game night at my friends house and it was a hit. I made some venison kofta as part of Greek platter. The key is lots of seasoning and fresh herbs.

Ingredients

  • 1 lb ground venison

  • ½ grated onion

  • 5 cloves garlic (minced)

  • 5 oz crumbled feta

  • 3 tbsps fresh parsley

  • 1 tsp dried parsley

  • 1 tsp dried oregano

  • 1 tsp sumac

  • ¼ tsp cinnamon

  • 1 tsp cumin

  • ½ tsp dried mint

  • 1 tbsp olive oil

  • Salt and pepper to taste

Preparation

  • FOR THE KOFTAS
  • Instead of grating, I added the fry seasoning, olive oil, onion, parsley and garlic in a food processor and mixed everything together. Wring the extra liquid in cheese cloth so it’s not too wet.
  • Add the processed onions and seasonings to ground venison, and mix with your hand until well mixed.
  • Add some crumbled feta last, it’s a nice bite of salty tanginess.
  • Use your hands to form small football-shaped patties and spray with olive oil
  • Air fry for 12 min, turning halfway.
  • PUTTING IT TOGETHER
  • Make a platter with Mediterranean-inspired ingredients. Anything people can graze on. Some ideas include: feta cheese, grapes or other fruit, olives, tzatziki, hummus, Greek salad, veggies, pitas and enjoy!
