Matthew Dollenbacher recently joined us on the Wild Fish and Game podcast to talk about invasive Asian carp, which include silver carp, bighead carp, grass carp, and black carp (listen here). Matthew works as a Biologist for the Department of Fish and Wildlife in Kentucky removing invasive carp from the lakes and reservoirs. He’s become a passionate advocate for eating these fish and was generous enough to share two of his favorite carp recipes with us!

Ingredients

  • For the Smoked Carp Dip
  • 1 cup sour cream (or whipped cream cheese for more of a spread)

  • 1 cup mayo

  • 1 ⁄2 cup of relish

  • 1 cup flaked smoked carp

  • Splash lemon juice

  • Season with old bay, pepper, and salt to taste

  • For the Silver Carp Salad
  • 1 cup mayo

  • 1/3 cup relish

  • 1 cup flaked smoked carp

  • Splash lemon juice

  • Season with old bay, pepper, and pinch of salt to taste

Preparation

  • For the Smoked Carp
  • Fillet the carp like you would any other fish, leaving the skin (and scales) on.
  • Set smoker to 250°F (Matt uses hickory chips).
  • Set the fillets skin-side-down in the smoker and smoke for 2-3 hours. Let cool.
  • Pick the meat out, leaving any bones behind and gently flake.
  • For the Smoked Carp Dip
  • Mix all ingredients in bowl, serve with crackers! Refrigerate leftovers.
  • For the Silver Carp Salad
  • Mix all ingredients in bowl, serve with crackers or on bread like tuna salad!
  • Refrigerate leftovers.
