The holidays are the time of year to break out the special dishes that you only eat once or twice a year. Big family holiday dinners wouldn’t be complete without some sort of stuffing. This recipe does not follow the traditional stuffing method of cooking inside of the turkey. This wild game sausage recipe packs tons of flavor, and lets you make it as moist or as dry as you want!

Using mostly store bought stuff to cut down on prep time, this recipe is easy, makes enough for everyone, and will be the talk of the table! The aromatic veggies here add that traditional smell you get at family meals, while the sausage is there the flavor comes from. Adding the seasoning helps up the flavor as well as adding the stock. Because who wants just water when you can have stock?! The spices from the Harvesting Nature Big Game Blend help marry the sausage and the bread cubes while upping the flavor even more! For even more added flavor, homemade stocks work best. This recipe works with really any sausage, wild game or store bought, even spicy ones for you heat lovers! This recipe does not follow the traditional stuffing method of cooking inside of the turkey. This wild game sausage recipe packs tons of flavor, and lets you make it as moist or as dry as you want!

Ingredients

  • 2 – 14 oz bags stuffing bread cubes, unseasoned

  • 1 lbs sausage (boar, elk, moose, venison, any wild game sausage)

  • 1 cup diced celery

  • 1 diced sweet onion

  • 2 cloves garlic, minced

  • 1 Tbsp salt

  • 1 Tbsp pepper

  • 1 tsp rubbed sage leaf

  • 6 cups stock (wild game, chicken, turkey)

  • 1 Tbsp Harvesting Nature Big Game Blend seasoning

  • 1 stick butter + 1 Tbsp for cooking

Preparation

  • Over medium heat, add 1 Tbsp butter and add onion and celery, and garlic. Cook until onions are slightly translucent.
  • Add sausage and cook until the sausage has a good sear all around. Add in 1 cup of stock to deglaze pan, remove from heat, and allow to cool (cooling time of 15-20 minutes)
  • In a large bowl, place stuffing cubes, salt, pepper, sage, and Big Game Blend and mix well.  Add in sausage mixture and mix again.
  • Pour in remaining 5 cups of stock and thoroughly mix for 5 minutes. Allow the mixture to rest for 15 minutes and then mix again. Add more stock to desired moistness if needed.
  • Add mixture to a 9×13 baking dish and be sure to pack it in tight. Melt 1 stick of butter and pour over top of mixture.
  • Cover with tin foil and bake at 350 for 45 minutes. Remove foil and bake for another 15-30 until desired browning on top.
