Film: How to Clean a Spiny Lobster

Just like the old adage goes, “There are many ways to skin a cat.” Well, I think there are many ways to clean a lobster. I have watch many a lobster cleaning gone wrong when someone merely rips the tail off and tosses the head back in the water. I prefer to get the most out of all the animals I harvest. This cleaning methods lends to several preparation methods.

Most commonly, I split the shells down the middle to prepare on the grill. The use of a pellet smoker allows you to impart some smoky flavors into the meat which mix well with the flavor of the lobster. The Florida Spiny Lobster does have a much different flavor in comparision to its cold water cousin from New England. I usually prefer the New England variety, but I am not going to complain about having fresh lobster on the table.
