My favorite game meat is venison, specifically white tail deer. It is lean, tender, and flavorful. Most of the hunting I do is on our property in upstate New York and eating a deer from our property is one of the most rewarding experiences I have ever had. I swear that any fish/game harvested by your own hands has some special flavor that you cannot get any other way!
1- When I am backpack hunting in the mountains, I dream all day about Mountain House beef stroganoff for dinner. Just something about it that Mountain House nailed and I could eat it everyday.
2- Here is my all-time favorite though. Shrimp. And not just any shrimp. You can’t beat all you can eat and freshly caught spot and coon stripe shrimp. Super fresh shrimp just hauled up from the depths taste like sweet buttery heaven. Amen.
My favorite game meat is venison because I can’t resist a good hearty steak or roast!
I really enjoy Red Deer steak with Potato gratin! With a smooth and warm Red wine saus!
I am a huge fan of duck. The fats in the meat always gives it an amazing juiciness. Growing up, we always sliced the breast meat, seasoned it, battered it, and pan fried until crispy. We would then top it with brown gravy. Just the thought of that meal makes my mouth water.
I grew up on everything from elk to sheephead but I’ve got to say smoked salmon is one of my favorites. The first time I had it was when my dad brought back some packages of it from a trip to Alaska and I’ve been hooked on it since. The vacuum sealed packs you can buy from the grocery store may not be as good as homemade, but add a pack of crackers and you’ve got a great snack for your next backpacking or hunting trip.
Deer meat. It’s versatile and delicious. You can do so many different, interesting, and classic preparations with deer meat. I love the sweet, slightly wild flavor it always carries forth in the dishes it is involved. I also love it for where it comes from. There is a story and sense of accomplishment that accompanies every meal.
I think my favorite has to be venison. It’s such a versatile meat that can be used in place of beef anywhere. Grind it up with some fat from a wild pig and there isn’t a finer burger out there…
Elk. I love all game, bit elk has a special place in my stomach.
